Non-profit website, would like to post articles and press releases from other sources about the company. Is it illegal to copy and paste the content to the website as opposed to linking to the physical article?

Likely not. You need the permission of the author of the article to repost their work. Even though you have a non-profit website, a substantial use of someone else’s work is a violation of their copyrights. Some authors are happy to give that permission for free, but it’s safer to ask them first before you use their intellectual property.
It a copyright violation to copy and paste the content. It makes no difference that you have a non-profit site.
